She cleverly blended the period features of the 17th century building with modern, stylish and sometimes quirky touches. Anouska Hempel also gave parts of the interior a strong Asian feel with her dramatic use of a black and white palette, theatrical lighting and furnishings sourced from Japan and China. \n\nThe public areas of The Dylan have recently been refreshed and extended by the international design award winning company FG stijl to take the Dylan to a higher level. The Lounge has been redesigned to provide a relaxed, intimate space for drinks or informal meetings while the bar is one of Amsterdam's hippest hangouts. The bakery flourished until 1811 and you can still see the original ovens, which were discovered intact during the restoration works. Echoing the decor of the hotel, Executive Chef Dennis Kuipers created a menu that combines the traditional and the modern. The dishes served in the popular Vinkeles reflect Kuipers' love of contemporary French cuisine. He combines the freshest ingredients to produce a menu that is delightful and unique to Vinkeles. His signature dishes include roast Anjou pigeon with five spices, mousse of bitter Caraibe chocolate, coffee couscous with marinated mango and a mascarpone sorbet. The restaurant is open from Monday to Saturday, from 19 00 till 22 30.roomamenity The Dylan offers 41 luxuriously appointed rooms and suites, which are all unique and are up to 75 square metres in size. Some enjoy stunning views over the canal while others overlook the stately interior courtyard. Some of the suites are arranged over two floors and others offer features such as four poster beds, freestanding marble tubs and flat screen televisions. \n\n Many of The Dylan's regular guests have their favorite room or suite whether it is the exposed wooden beams, relaxing natural colors and crisp white bed linen of the Loft Suites or the warm ginger and tumeric colours, black mahogany floors and Asian detailing of the La Carmona Suites.
